PARMESAN CRUSTED TILAPIA:
ROASTED ASPARAGUS

- 1/4 tsp Black pepper
Chipotle Cilantro Lime Rice
- 2 cups Basmati Rice unrinsed, or any long-grain white rice, rinsed
- 1 Bay Leaf
- Salt
- 1 teaspoon Olive Oil or Rice Bran Oil, optional
- 2 tablespoons minced Fresh Cilantro
- 2 tablespoons Lime Juice
- 2 tablespoons Lemon Juice
The Story
For this week's 5 meals | $20 or less meal | Ready in 30 minutes preparation, I chose to prepare 2 recipes each with simple, yet flavorful ingredients. With the summer season, I decided to select Tilapia and Asparagus for my fresh ingredients. Then, went with the copycat version of Cilantro Lime Rice from Chipotle swapping Basmati or Long-grain rice with Brown Rice for this recipe in order to provide healthy ingredients.
